Peanut Butter Granola

I have always favored making items from scratch at home, so it’s great when I can add some easier go-to recipes into the mix, which perfectly described my peanut butter granola! This tasty mix is a nutritious and filling option that I love eating on parfaits, as a cereal, or just in chunks as a snack on its own. I have started making different granolas on a weekly basis, and this one wins first place for my older son, who is a teenager now and can go through snacks at a shocking speed, of course. With the relatively short list of ingredient, all of which I am happy with, and the minimal effort involved, this is a recipe that I know I will be frequenting for many years to come.

Peanut Butter Granola

Ingredients

  • 4.5 c rolled oats

  • .5c Peanut butter

  • .5c honey

  • 1.5 tsp vanilla

  • 2 tbsp Ground Flax Seed

  • 2 Tbsp Hemp Seeds

step:

  • Pre-heat over to 275.
    Place peanut butted and honey into a microwave safe bowl and microwave 45 seconds, until honey is melted and peanut butter is starting to melt as well.
  • Add vanilla to the peanut butter and honey mixture and mix all together well. Next, add in the oats, ground flax seeds, and the hemp seeds and stir all together until everything is fully incorporated.
  • On a parchment lined baking sheet, spread out the mixture evenly and try to gently flatten with a spatula or you can slightly dampen your hands to do this. Bake for 20 minutes.
  • Take out granola and gently mix it around and flip it over. Once mixed, flatten all of the granola again. Note that compacting it down like this is what will make the bigger chunks of granola. Place back in the oven and bake for 10-15 minutes, until the granola is lightly browned.
  • Let the granola cool completely in the pan. Once fully cooled off you can break the granola into the desired size of chunks. Store in an airtight container and enjoy!
