This here is my kids all-time favorite breakfast! They are the perfect texture of light and airy but also hold together very nicely. Over the years I have tried more recipes than I could count and was finally able to fine-tune our preference into this delicious, fluffy, morning treat.
Fluffy Pancakes

1 1/2c Flour
1tbsp Baking Powder
1tbsp Sugar
1tsp Salt
- Wet Ingredients
1 2/3c Milk
1 Egg
1tbsp Oil (I use Avocado oil)
1tbsp Butter
Directions
- Pre-heat a griddle to 350 or frying pan on medium heat.
- Mix Flour, Baking Powder, Sugar, and Salt together in a mixing bowl and set aside.
- In a 2c measuring cup add in 1 and 2/3c of milk and 1 egg and stir together to break up egg. Next add in the oil and melted butter and mix well.
- In the center of the dry ingredients pour in the wet ingredients. With a whisk gently mix together until the batter is incorporated with little lumps. Do not over mix or you will get flat pancakes!
- With my griddle or non-stick pan I do not need to add any butter given that I have some butter and oil in the recipe. Test your pan to see if this will work and if not then butter or oil the pan. Scoop batter in 1/4c at a time and cook until both sides are golden brown.
