Ingredients

  • 1c Raw Cashews

  • 2-3 Medjool Dates

  • 1 tsp Vanilla Bean Paste

  • 1/8 tsp Salt (Preferably Celtic Sea Salt)

Directions

  • Soak 1c raw cashews for up to 6 hours.
  • In a small bowl add 2-3 Medjool dates (or amount desired based on preferrable sweetness) and cover with hot water and allow to sit 15 minutes. Drain and place in blender with the cashews, vanilla, and salt.
  • Blend all ingredients for 2-4 minutes, until mixture is completely smooth. If you have a powerful blender there should be no need to strain the mixture. Enjoy!

Notes

  • Note that soaking cashews too long could result in a slimy texture so I generally aim for the 6 hour mark as my optimal amount of time.
